Enchiladas are one of my husband’s favorite dinner recipes…I have to be honest, I love them too! Tonight we are celebrating his birthday so when I asked him what he wanted to have for his birthday dinner, I knew I didn’t need to ask and I should just start pulling the tortillas out of the pantry! However, when I went to look for some enchilada sauce to mix with the ground beef, I soon realized that I was going to have to improvise since I did not have any on hand. When in doubt explore the shelves of your pantry!
Homemade Enchilada Sauce
3 Tablespoons of Vegetable Oil
1 Tablespoon of Flour
1/4 Cup of Chili Powder
2 Cups Chicken Stock
10oz Tomato Soup Concentrated
1 Teaspoon Dried Oregano
1 Teaspoon of Cumin
1/2 Teaspoon of Salt
Once I started mixing everything together…I knew I was on the right track since it spelled delicious! I also added a few drops of Sriracha chile sauce to give it an extra kick!!
Not only was this sauce easy and quick, it also used up a lot of those random items in the pantry that usually get pushed to the back and are forgotten about.
